At Maishokupan, our name plays on mai (every) + shokupan (Japanese milk bread)—a deliberate, stylish choice reflecting the great care we take in crafting every single loaf for your daily life. While it translates literally to "every shokupan," it brings together cultural context and modern food branding into a playful wordplay: a celebration of an everyday staple and an abundance of variety that puts our craft front and center, while in English, it speaks to our personal commitment to crafting each loaf, sandwich and pastry with great care. For you. Every day.
Our craft reaches back centuries, bridging East and West. Long before it became a Japanese staple, the technique of enriching bread was introduced to Japan by Portuguese traders in the 1500s. Japanese bakers took those foreign influences and perfected them through meticulous science—inventing methods like the yudane dough starter to create a loaf of unmatched, pillowy softness.
Today, right here at The Rochester Commissary, we bring that history and craft to life through three core offerings:
Cube Shokupan Loaves: Our signature square loaves, available in five rotating monthly flavors. Slice them to whatever thickness you need for French toast, toast, or your favorite recipes. For now, you can grab them in person at the City of Rochester Public Market on Saturdays, or pre-order on our site—our pre-order link goes live every Wednesday and closes at 11:59 PM.
Konbini-Style Sandos: Both sweet and savory sandwiches modeled after the iconic convenience store staples of Japan, built fresh daily using our milk bread for a premium taste in every bite. We plan to offer these starting at 12:00 PM from the commissary performance kitchen a few days a week (Monday through Thursday).
Mini Shokupan Cubes: Our playful take on pastries! We take the same beloved flavors of our loaf shokupan, scale them down into smaller, cuter sizes, and finish them with delicious, rotating seasonal fillings and toppings.
Melonpan: A beloved Japanese sweet bakery classic featuring a pillowy-soft bread dough wrapped in a crisp, buttery cookie crust scored with a checkered diamond pattern. At Maishokupan, we weave together our Japanese and Mexican heritage to craft our version using our signature yudane-enriched milk bread dough—delivering a shatteringly crisp, sweet top layer over a meltingly tender, cloud-like crumb.
Alongside our direct-to-consumer schedule, we are also preparing to offer mini shokupan for wholesale to local coffee shops and other small businesses (we’ll have that schedule locked in and shared soon!).
As demand grows, we plan to increase our days of operation—giving you even more days to pick up our fresh shokupan, sandos, and mini loaves. We hope you make our bread a part of your routine, one cloud-like slice at a time.
